Nimar is the southwestern region of Madhya Pradesh state, which lies south of the Vindhya Range, and consists of two portions of the Narmada and Tapti river valleys, separated by a section of the Satpura Range. Nimar cuisine evolved due to Mughal rule for a long time over this region. The delicious food that forms a part of Nimar cuisine reflects the rich culture that is pursued by the people of this region even today. Significant Dishes of Nimar Cuisine are- Jowar ki roti and amadi ki bhaji, Kusli, Palak Puri, Dal baati , Lavang Lata, Mewabati.

Bundelkhand is the region located almost in the heartland of the country. Inspired by the indigenous tribes of Madhya Pradesh, the food is typically a tribal cuisine with traditional style of preparation using raw materials and extensive consumption of different types of millets making it distinguishable from the cuisine of other regions. Highlights of Bundelkhandi cuisines are Raas ki Kheer, Bundeli Gosht, Kodu Til ka Bhaat, Kunde ka Bhatta etc. For non-veg lovers, Bundelkhand offers some un-matched traditional cuisines including Bundeli Gosht, Kadaknath Murgha, and Keeme Ki Tikki. Interestingly, Kadaknath Murgha is also known as 'Kali Masi' because of its dark colour. It is one of the varieties of chicken, mainly found in the areas of the Madhya Pradesh.
